Snow Day Chicken & Parmesan Soup

Makes 4 servings
[seasoning quantities are approximate, feel free to taste test as you go & experiment]

Snow Day Soup

1/2 cup (uncooked) rice
3 cups water
3 chicken bouillon cubes
1/2 tsp dried rosemary
1 tsp dried parsley
pinch of thyme
pinch of red pepper flakes
pinch of onion powder
1/4 tsp oregano
1/2 tsp garlic powder
salt & pepper to taste
1 small box or bag frozen mixed veggies
1/3 cup grated parmesan
four slices mozzarella

1. In a medium sauce pan, boil the rice per package instructions.
2. While rice is cooking, put 3 cups of water and 3 bouillon cubes in a medium saucepan. Bring to a low boil and add the rest of the spices. Boil 2-5 minutes, then add the mixed vegetables and parmesan. Boil this until your rice finishes cooking in the other pan, then add the rice to the broth.
3. Divide soup into two (or four) bowls and top with slices of mozzarella. Cover to melt (if it doesn’t melt, put oven-safe bowls in the oven at 300 degrees for 5 minutes, or use the microwave).
