Family Recipes: Mama B’s Easy, Light Pineapple Cake

In response to Cupy Cakey’s recent family recipe post:

This is one of my all-time favorite cakes and I’m so lucky my future mom-in-law told me how to make it! It’s a perfect spring & summer birthday cake and it also works great for an Easter or  BBQ dessert – it’s so light, yet moist, sweet and filling.

You can’t even really mess it up, no matter how lazily you throw everything together – the first time I made it (for my friend Jess’s birthday – Hi Jess!) I got it all stuck to the inside of the round aluminum pans I was using and had a near-disastrous time getting it out – and it still tasted great (totally my fault, I didn’t really follow the box directions very well. Oops!).

Mama B’s Pineapple Cake

  • 1 large can crushed pineapple
  • 1 box angel food cake mix
  • 1 cup water
  • light whipped topping (Cool Whip style)
  1. Mix together the cake mix and water, then add pineapple and bake according to box directions.
  2. Cool, top with whipped topping, and refrigerate.
